HKSQ Student Project Competition 2012 - Site Visit

The HKSQ Company Based Student Project Competition offers an opportunity for students to work on an actual industrial case and propose resolution. This allows them to gain experience of resolving an industrial problem. The competition included three sessions. The first sessions was problems selection which problems were designed and explained by sponsor company (e.g. Vital-ealth Livestock Development Limited in 2012). The second session was factory visit and the last session was presentation of suggested solutions.

The second session was site visit on 25 Feb 2012. There were separated into two team. One team visit market and packaging center. The other team visit chicken farm. Since I had visited chicken farm on 5 Nov 2011, I led the team to visit market and packaging centre. (For more information of chicken, please visit the reference link.)
We gathered in Tsui Sing Lau Pagoda near Tin Shui Wai MTR station at 7:30am.


When arrived to the Market, Mr. Siu briefed us the processes.


Usually, all chickens would be handled before we arrived. Some chicken were reserved for this visit purpose. It was a special arrangement for student (included HKU, HKUST, PolyU and CityU).


The staff slaughtered chicken and show the handling procedures to us step by step. Firstly, chicken was placed into the hole upside down for bleeding.


The second step was put the chicken into hot water roller (max. Capacity: 12 chicken) to heat the chicken for preparing removal of chicken feathers.




The third step was to transfer all chicken into the high speed roller which removed chicken feathers very fast.



After that the staff removed chicken's internal organs.


Then put chicken bodies into water to reduce the temperature.


Moved chicken into another container for transportation


All chicken moved into the van and then transferred to packaging center.


We arrived the packaging centre.


The company had achieved "Organic Crop Production Certification".


Student went into the centre to observe the packaging operation.


Mr. Siu introduced the packaging material in which the cover was Polyethylene (PE) and Ethyl Vinyl Acetate (EVA), and the box was Organophosphorus compounds (OPs).


The packaging process was observed. The fit size chicken were packed by the machine and the other size would be packed by plastic bag.



The pork used the same machine in which only replace the fitting head.


Some packed chicken and pork were storage into the cool room.


Some product would be transferred to different location for customer. During the transportation, they used many small ice bags to keep the temperature low.


After the visit, we had lunch in restaurant and student discussed their observation with sponsor company staffs. I represented HKSQ to give a flag to Mr. Kwok Ming Cheung (Managing Director, Vital-Health Livestock Development Limited) for appreciating his sponsorship for this student project competition.


We took a group photo in front of the restaurant.


The third session was solution presentation and would be held on 24 Mar 2012. Students would provide solution based on the following topics:
- How do we reduce the electricity consumption and maintain health environment?
- How do we maintain freshness period of packed chicken and pork?

  1. i am very disappointed since science park is to upgrade the technology in hong kong but you only lead u students to do low level job, let u students to do primary 6 job, it is totally waste hong kong u students' talent!

    The purpose of this competition is to offer an opportunity for students to work on an actual industrial case and propose resolution. Eventhough agricultural industry is the first type of industry which is not so important in Hong Kong in term of GDP, it still contains high-technology elements but you don't know. For packing technology, it uses N2 pouring to displace air in order to reduce the failure rate of packed food. Some others may use CO2. (We visited rice industry in Hong Kong before.) Another team of student need to solve the high energy consumption problem in chicken farm. The farm had already installed a new solar system for summer and winter use. It needs to further improvement the effectiveness and efficiency.

    So you comment indicates that you have little knowledge in agricultural industry.
